This trip winds its way through many exotic avenues, beginning with an assortment of unconventional ice creams freshly concocted within the inspired confines of rare’s kitchen. These flavours include passion fruit and chilli, salted peanut and the much feted seeni sambol and sprats, to name but a few from an enticing range of thirteen.
Some of the other dessert dishes which espouse this unique infusion of local ingredients with popular foreign fare are the kithul pani avocado yoghurt mousse tart, rambutan mixed in with red fruit crumble and butterscotch, a mille-feuille loaded with mango and pistachio and a nougatine chocolate replete with coconut and arrack. For those with more traditional but equally critical palates, a selection of celebrated eastern and western desserts - such as a mouth-watering chocolate mousse and a comforting ensemble of homemade jaggery, curd and thala kareli - have been expertly executed with the finest ingredients.
